Birgir

Birgir is a character from God of War: Ragnarok. There's a scene in the game where the characters are on a flying boat and are being attacked by some monsters. This is when Birgir is introduced for the first time, going from being a nameless background character to abruptly being the center of the scene, at which point he dramatically jumps off the ship, kills both of the monsters, and falls to his death. When Joe played GoWR and got to this part, he thought the scene was hilariously bad because he had no investment in whoever the fuck Birgir was supposed to be. Then a little while later you find out that Birgir somehow survived the fall, because you see a flare off in the distance and someone tells you that it must be Birgir. Then you begin a really long quest to find and rescue him. When you find him at the end, you ask him how he survived the fall, and he just says "I rolled".

Joe started saying "For Birgir!" a lot before fighting enemies in games during his Half-Life streams, although he came up with the line briefly after the initial Birgir incident happened.
