In Joe's streams of Undertale, he named the protagonist "Waffles" for no apparent reason (except it was actually "Waffls" because of the character limit).[1] Since then, it became a tradition in every game for him to name the protagonist "Waffles".
If he ever doesn't call the protagonist Waffles or some variant of it, sometimes he calls them "Joe the hoe" instead.
Dadapon
However, "Waffles" outside of this context usually refers to the protagonist of Persona 5, who Joe called "Waffles Dadapon".[2] He also did a voice for this character.

In Genshin Impact, he called the protagonist "Waiffles", which is a portmanteau of "waffles" and "waifu".
